The heart and soul of the resort is our Main Lodge that houses our main restaurant and tavern and delights visitors with a storied past dating back to 1921. To deliver the best tasting healthiest food, we focus on sourcing all natural meats and local organic produce and on cooking as much as possible from scratch.
Our historic tavern is a local favorite for the specialty drinks, craft beers, wine list, casual lunch and dinner, and lively company. You’re sure to enjoy its authentic old-west atmosphere, including a pool table, historic photos, 30-foot wood bar and wrap-around wooden porch.

Meet the Chef
Chef Aaron Haasteaby was born and raised in Chicago Illinois. After learning to cook on the East Coast (Virginia), Haas attended Culinary School at Kendall College in Chicago then took his culinary expertise to work in France.
Following his endeavors in France, he developed a love for cooking Modern French Cuisine.
We love his food because he elevates traditional meals to an entirely new flavor profile, and yet he brings beauty and sophistication to the plate with irresistible combinations such as our famous Evergreen Centennial Chicken a la King with Mushroom Barley Rissoto, Lemon, Oregano, Spring Peas, and Sherry Wine Sauce.
When he’s not in the kitchen preparing amazing food for the Evergreen, you can find him hiking Yosemite classics such as Hetch Hetchy and Half Dome, where he proposed to his wife.
His favorite part about working at Evergreen is the family atmosphere that has been cultivated through our warm and friendly staff.
